Oregano surely has to be Italy's best known Italian herb. Often overused on Italian-style pizzas and tomato sauces here in the U.S., oregano is used more sparingly in Italy (and is never added to Bolognese). It pairs well with robust vegetables, particularly eggplant, as well as breads and olives.Oregano is a principal ingredient in classic alla pizzaiola dishes -- Neapolitan-style recipes that include tomato, olive oil and oregano. This small-leafed herb grows up to 2-feet high and produces pinkish flowers when mature. It's also the only herb that is more aromatic in its dried form. Note: Because these herbs are dried naturally (thus retaining more of their flavor and nutrients) and packed in airtight containers, they stay fresh longer than most supermarket brands. This oregano is harvested by the De Col Piras family in Sardinia.
