Product Description Grown on the hills of Modena, the Trebbiano grape is the best raw material for quality balsamic vinegar. Custom demands that the grapes are harvested as late as possible so as to take the utmost advantage of every last touch of the warmth a generous nature provides in Modena.The grapes are then crushed and the must run off as the ordinary wine making procedures. However, here the vinegar maker is allowed not even the slightest distraction for the must cannot be allowed to ferment. After this, it is filtered and run into a boiling vat where it will be brought to a slow boil over a fire and then allowed to simmer gently until the desired level of concentration is reached. Once the cooked must has been removed from the boiling vat, it is filtered again and poured into the casks after cooling.This operation is called "topping up". This comes over the years when the must is transferred from one cask to another in a decreasing progression. Here technique is no longer enough because it is at this point that the experience of the craftsman acquired over long years of patient looking and learning comes to the fore to bring the balsamic vinegar to its best form - that almost miraculous harmony between ingredients, time, and man's expert touch. This precious liquid is aged for 25 years. AGED 25 YEARS

There are very few really expensive things in this world that justify the ridiculous expense you pay for them (i.e. BMW M series, Global kitchen knives, great Italian/French wine...). THIS VINEGAR IS ONE OF THEM. I bought some of this as a gift for a friend of mine who appreciates fine ingredients and was fortunate enough to have him share it with me. We mixed a little of this with high end olive oil and dipped some bread in it. I can only describe the feeling as if the Devil himself did a very short dance on your tongue and was immediately followed by Angels covering your pallet with velvety soft kisses. It is that good.
