This extraordinary pasta is made with only Puglia-grown Italian durum wheat and water. With so few ingredients, every detail counts. The pasta is made in small batches and cut with a traditional bronze die, giving it a rustic, bumpy texture that holds and absorbs sauces. The first "fusilli" pasta was actually fresh spaghetti that Southern Italians wrapped around a thin rod and let dry into a corkscrew shape.
