Another specialty of Gascony, confit is a time-honored method of preserving meat by salting it and cooking it slowly in its own fat. The cooked meat is then packed into a crock or pot and covered with its cooking fat, which acts as a seal and preservative. My husband and I go to France just about once a year. We love duck confit. This product is just fabulous, I use the duck fat for roast potatoes, the flavor is absolutely wonderful. Served with a salad and those roast potatoes, its like being back in France!!
