These little sour/salty/bitter fermented Japanese plums are simply fantastic. Strewn through rice, tofu, veggies,etc., they add an unusual and stimulating flavor sensation. If the quantity of the food is small, you probably won't want to add any more salt, so be wary. I am sure the Japanese people didn't intend the plums for this purpose, but they are an absolutely wonderful addition to a martini, in lieue of the ubiquitous olive. I purchased some of the umbeboshi vinegar as well, which is, again, delicious sprinkled on almost anything that is compatabile with a salty taste.
