Special plum trees in the heart of orchard country in Lot-et-Garonne in France are cultivated exclusively for prune making. The ente plum is a hybrid of a local plum and the exotic damask, brought from Syria in the 12th century. The plums are shaken from the trees, dried in the sun and finished in a barely warm oven. The result is a huge, plump prune with a deep spicy aroma, a summer harvest ready to enjoy all winter long. Monsieur et Madame Raymond Cabos make the best Pruneaux d'Agen in France. They cultivate their own plums in orchards handed down through generations in Mirabel, in the southwest of France, in the heart of prune country, and their staple product is perfect, The plums are shaken from the trees, and air dried into some of the best Pruneaux anyone has ever tasted, but they dont stop there.
