Product Description Ancho Pepper Paste. The most commonly used dried pepper, Ancho peppers are known for their mild, fruity flavor with just the right peak of heat. One of the "Holy Trinity" of peppers - a major component of traditional mole dishes. Use in preparation of moles and sauces. Stir Ancho Paste into Refried Beans to enliven the taste. Whisk Paste with mayonnaise to create superb sandwich spreads. Add to corn dough to prepare flavored tortillas or tamales. The Ancho is dried poblano chile, medium to thick fleshed, wrinkled with broad shoulders at the stem end, tapers to a round end. It's the most commonly use dried chile in Mexico. Brick red to dark mahogany, with an orange-red cordovan tint when held up to the light Measures 4" to 5" long; about 3" across the shoulder measures 4" to 5" long; about 3" across the shoulder. Mild fruit flavor with the tones of coffee, liquorice, tobacco, dried plum, raisin with a little woodiness, the sweetest of the dried chiles. The ancho along with the mulato and the true pasilla form the "holy trinity" of chiles. Grown In the Puebla region, central valley of Mexico, (Mexico City region) and California. (Chile colorado)

This chile paste is just that ... the paste that results from soaking and blending dried ancho chiles. I use this a lot in my recipes. It's a big time saver, and the pastes hold for a long time. Combine this paste with the pasilla and guajillo pastes from the same manufacturer to make the base of a classic mole sauce.
