YCs Sugar Free products meet the FDA sugar free requirement not to exceed 0.5% sugar from any source, per serving size and are lactose (milk sugar) free. YCs cocoa beans have been properly grown, harvested, fermented, dried, blended, roasted, winnowed, refined, conched and tempered, to create our unique intense chocolate taste. The sweetener used in our confections is Maltitol a non sugar sweetener that comes from corn. It is about 90% as sweet as sugar and is non-cariogenic. Maltitol is mostly not digested and therefore, like fiber, the Maltitol carbohydrates listed on the nutritional panel should be deducted from the Total Carbohydrates to arrive at the net digested carbohydrates. This results in 2g of carbohydrates per 42g serving in the Milk Bar. This product is therefore particularly useful for those looking for a low carbohydrate confection. YCs confections do not raise blood serum glucose and are therefore also suitable for diabetics. Because we use a minimal amount of Maltitol, the usual laxative effect is all but eliminated.

Superb low carb chocolate May 11, 2004

I came across this chocolate in Seattle in May 2004. I have tried both the dark chocolate and milk chocolate versions, and found the milk chocolate version to be my preference. (I generally prefer dark choclate because of the rich full chocolate flavor.) The Yamate milk chocolate was as rich and full flavored as most dark chocolates, so I was more than pleased - and satisfied - with the milk chocolate version. I did find the chocolate so rich that, a full slab later, I was on a strong caffeine buff, so buyer beware; this is the real thing. The sweetener, maltilol, luckily has no effect on me. I avoid products containing sucralose (Splenda) because this sweetener messed up my liver enzymes big time, and made me ill and nauseous. (On a side note, fellow low carb dieters, please do your research on sucralose; my doctor thought it was my lipitor that was affecting my liver - turned out it was sucralose.) So, the Yamate Chocolatier milk chocolates are ideal for me on my low carb diet, and meet my demands for a rich, European style, genuine chocolate product which I can relish on my diet.
