Product Description
Very little known here in the States, Capra Valtellina is made in the mountainous region of Lombardy, from goat's milk (capra is in fact Italian for goat). It has a flavor that is herbal and nutty, but still retains a unique clarity and lightness and a clean finish. It's a great mild aged cheese with a brittle texture that can be compared to Parmigiano, but with more moisture and creaminess to it.
