In the heart of Tuscanys spa country, Montecatini Terme (think Napas Calistoga), this famous local specialty first emerged in the 1920s. The family of artisan baker Orlando Bargilli was one of the first to specialize in Cialde. Today, son Paolo Bargilli is no less of an authority on Cialde than his father was and, luckily for us, his wares are just as delicious.
